Grain-Free Pumpkin Granola (aka "Drew’s Granole") + VIDEO!!!!

As you may have heard, I’ve been working with Drew Canole over at FitLife.tv to launch a new cooking channel, FitLife Kitchen! So exciting! We’ve been hard at work creating awesome step-by-step videos and simple recipes…and here is the very first!!! Its one of my favorite breakfasts, and in honor of it being the first episode, we have named it after Drew 🙂

Grain-Free Pumpkin Granola (aka “Drew’s Granole”)
To simplify recipe: choose one type of nut (almond, walnut, or pecan), one dried fruit (cranberry, cherry, apricot), and one kind of seed (chia, flas, pumpkin, sunflower) instead of a combination as shown here.
Ingredients:
- 3/4 cup Coconut Oil
- 15 ounce can pureed Pumpkin
- 1 cup Dates paste
- 1 tablespoon Cinnamon
- 2 teaspoon ground Ginger
- 1 teaspoon salt
- 2 cup blanched slivered Almonds
- 2 cup Walnuts, chopped
- 1/2 cup Pecans, chopped
- 1 cup Flaxseeds
- 1 cup dried Cranberries
- 1/2 cup Pumpkin Seeds (pepitas)
- 1/4 cup Chia Seeds
- 1 cup shredded unsweetened Coconut
Directions:
Preheat oven to 325 degrees. In a large bowl, mix first 6 ingredients (through salt). Add remaining ingredients and mix well with clean hands. Spread in a thin layer on large rimmed baking sheets, preferably covered with a silpat or parchment paper. If these are not available, grease pan with coconut oil. Bake for about 45 minutes, stirring every 10 minutes for even cooking. Allow to cool before serving. I like this with homemade nut milk (or coconut milk), fresh berries, and a little tiny drizzle of maple syrup.
